Fresh Tomato Salad 
Serves: 6 to 8 
Ingredients: 
5 tomatoes, diced
1 onion, chopped
1 cucumber, sliced
1 green bell pepper, chopped
1/2 cup chopped fresh basil
1/2 cup chopped parsley
2 tablespoons crushed garlic
salt and pepper to taste
2 tablespoons white wine vinegar 
In a large bowl, combine the tomato, onion, cucumber, bell pepper,
basil, parsley, garlic and vinegar. Toss and add salt and pepper to
taste. Chill and serve.

HONEY BEE AMBROSIA
  4 med. oranges
  1 med. banana
  1/2 c. orange juice
  1/4 c. honey
  2 tbsp. lemon juice
  1/4 c. flaked coconut
Pare oranges; cut crosswise into thin slices & place in serving bowl.
Peel bananas; cut thin slices into bowl with oranges. Toss fruits.
Blend orange juice, honey & lemon juice; pour over fruits.
Sprinkle with coconut.

Mexican Chef Salad

1 head lettuce
2 tomatoes
1 avocado
1 bag Doritos, broken
1 1/2 lb. ground beef
1 can red kidney beans (15 oz)
1 onion, chopped
6 oz. Cheddar cheese, grated
1 cup Thousand island dressing (Kraft)

Brown ground beef & 1/2 onion. Drain.
Add beans; let cool while making the salad.
Mix lettuce, tomatoes, avocado & remainder of chopped onion.
Add dressing & mix. Add cheese
& Doritos. Don't add doritos too soon before serving or they
will become soft.
Just before serving, add meat & mix well.
Serves 6

PANTRY SALAD

1 can black beans, drained & rinsed
1 can whole kernel corn, drained
1 can black eyed peas, drained
1 can diced tomatoes
1 bell pepper, diced
1 bunch green onions, chopped
2 carrots, peeled and chopped
1 tsp garlic powder
salt and pepper to taste
1 bottle Italian dressing

In a large bowl mix all ingredients. Serve chilled.

seven layered salad
1/2 head lettuce
1/2 sm. green pepper
2 stalks celery
1 sm. onion
1 c. mayonnaise
2 tbsp. sugar
1 - 1 1/2 c. shredded cheddar cheese
bacon bits

shred lettuce into bottom of 8x8 inch square pan.
chop green pepper, celery & onion & spread over top of lettuce.
spread mayonnaise evenly over top.
sprinkle sugar & cover with cheese & bacon bits.
refrigerate overnight.

Spaghetti Salad

1 lb. spaghetti, cooked
1 onion, chopped
1 green pepper, chopped
1 tomato, chopped
6 oz. sliced pepperoni
6 oz. mozzarella cheese, shredded
Big bottle of Italian dressing

Toss together and chill. May be made the night before.
