You can simply open only the component you want (Writer, Calc, etc.) from
the menu, a desktop icon or a desktop tray icon.
Or, if the list of previously open files in start center is unwanted those
can turned off here:
Tools > Options > LO > Advanced :: Expert Configuration | Set PickListSize
to Zero
