 For now you need to use a non-compositing Desktop such as Mate or KDE,
compositing desktops don't presently work with X2Go.  My understanding is
that work is currently being done to remedy this.

any of the installs but this is under 14.04 LTS and 14.10, haven't tried

worked, including KDE.

At this point, I would suggest adding to your documentation that for Ubuntu 
15.04 people use http://wiki.mate-desktop.org/download and follow the steps 
for Ubuntu 14.04 with Ubuntu MATE

At present, this is a client-side setting, not a server-side one.
Also, if someone can view the data, they can take screenshots.  And a
malicious software on the client can send keystrokes pretending to be
the user.  So even if you block copy/paste on the clipboard, there are
still ways to do evil things.  Keep that in mind.

 One of the Gnome-3 fallback modes (I don't remember which) does work, I've 
had it working here, but the menu you get no longer has a System menu on the 
top bar, so I still prefer Mate.  I don't remember what I had to put on the 
session command or install to get it to work but I did have it working at one 
point.

IIRC no... At least none not requiring a newer GLX extension. I guess there is 
a software rendering fallback, but this still fails with NX. GNOME 3 
Flashback/Fallback don't work either, so X2Go is sadly currently screwed when 
it comes to these DE's...

Ubuntu 15.04 ships KDE/Plasma 5, which unfortunately also needs a newer GLX 
extension. As such, it sadly falls into the unsupported range.

Actually, Ive been quite happy to have that darn menu out of the way,
so Ive set my configuration to immediately minimize to the
taskbar/systray. ;-)
I prefer the right-click-to-start approach similar to the local start
menu. If you want to try it out:
- -Options/Settings, General tab, check Display icon in system
tray, and check all the boxes within that frame, too.
Since youre sending your mail from a .ch domain - in case you are
using a German-Language environment, the names are:
Einstellungen/Konfiguration, Reiter Allgemein, Symbol im
Systemabschnitt der Kontrolleiste anzeigen.

Also, note that there is a way to start one application immediately
after the connection is established in Published Application Mode.
Maybe you can use that as a workaround for your use case?

I.e. my customers use this to start the web browser immediately upon
connect, and when they need access to another application, they select
it from the context menu of the taskbar/systray icon.

Add --autostart=nameofprogram to the command line/shortcut for that.
