I've never done either myself but I don't grow my own fruit.
Little fruits like blueberries and raspberries freeze better but
even they are not the same when thawed out.
This is my backyard tree. I want the peaches from my tree. I'd like to
figure a way to save them for the winter.

I have a peach tree. If I do not get to the peaches than the squirrels
will. One year I tried freezing them but it did not work out well. Even
if the markets buy local won't the fruit still sit in the warehouses?

How are these fruits kept from going bad? Example: peaches from other
states.
