Homemade Cream Of Chicken Soup 4 cups milk 2 tablespoons all-purpose flour 2 tablespoons canola oil 2 tablespoons white sugar 2 cups finely chopped, cooked chicken meat 1/2-teaspoon salt 1/2 teaspoon ground black pepper 1/2-teaspoon garlic powder
Make a white sauce of milk or cream, flour, and oil. Add chicken. Add sugar, salt, pepper, and garlic powder (may use more or less as desired). Mix well and simmer for 20 minutes over low heat. If soup is not as thick as desired, mix a small amount of cornstarch with a small amount of water and add to soup. Simmer for 10 minutes. 2 bunches celery 1/4-teaspoon celery salt 1/4-teaspoon salt 2 tablespoons butter 3 cups fresh pasteurized milk, scalded Chop up celery leaves and 4 to 6 outer stalks (3 cups), and put into soup kettle. Add 2 cups boiling water and salt, and simmer about 45 minutes. Chop 5 tablespoons tender inner celery stalks to add to finished soup. Strain cooked celery and leaves through sieve; there should be 1-1/2 cup celery broth. Add to milk, which has been heated to scalding in double boiler. Add celery salt, butter and chopped raw celery.
