Because it's been covered on any number of urban legend sites... THE ONLY reason I can think is that you, and most, are in a hurry, i.e., "watching the pot for it to boil," and often stop the oven to see if what ever it is that you are heating is warm/hot enough yet, thus NOT ALLOWING WHAT EVER IT IS TO SUPERHEAT. Actually, I rarely boil water in the microwave...and the rare times I have, the window in the door gave me an adequate view of what was happening to the water.
