You should not have any problems using iPhone,Dovecot and Outlook together. My 2nd point about the default folders on the iPhone is relevant to Outlook - I believe it uses "Sent" and "Trash" folders, unlike the iPhone's "Sent Messages" and "Deleted Messages". Just in case you haven't used IMAP
