to confirm that we can upgrade directly from version 3.1 to version 5.1? Or is
there an intermediate step of upgrading to version 4.x first?

Based on the error, it sounds like you may be installing the
dspace-4_x branch from GitHub? That dspace-4_x branch in GitHub has
versions that look like 4.4-SNAPSHOT.
If you wanted to actually install DSpace 4.3, you'd want to use the
tagged dspace-4.3 version in GitHub.

1. DSpace 5.X requires Ubuntu 14.04.
2. You need to install NPM. See:

3. You need an open internet connection.
