Skip,
I converted an '80's era H10-40A David Clark aviation headset. Adapting
it for use with the K3 required a complete rebuild. The microphone isn't
the only issue. The headband, domes, and mike boom can be salvaged, but
you may want to consider replacing the remaining parts.

You could move to The Aspens at Twin Creeks in Allen, TX. A little
warmer than Alaska perhaps, but they do have a very nice ham station for
their residents.

Setting the monitor volume in CW mode also sets the button feedback tone

I use AM mode from time to time. If AM is eliminated, CW will be next.
AM and CW modes are making a resurgence, and both can be accommodated.
I'm glad that Elecraft included AM in the K3.

Those that don't need the clock can simply tap DISP and it will go away.

You might want to consider using a macro to adjust the monitor level? At the
same time, you can change the EQ and other settings to suit your needs.
I use two macros to control microphones, speakers and TX EQ. They are
assigned to PF1 for the hand mike and PF2 for the headset/boom mike.
I saw the Receiver Audio Equalizer settings for CW in the KE7X K3 manual (p.

Also, I'm interested in what anyone is using for the transmit EQ settings
when using the Elecraft MH2 Hand Microphone.
