I am currently behind a university proxy (squid) server and all access to
the internet has to go through it. How do i configure evolution to be able
to access my gmail account via the proxy server?

It happen in new version of evolution too.
This looks like a generic exchange plugin bug.
If you create a exchange addressbook as a sub folder/sub address book from a
parent address book, and then delete the parent, the sub address book does
not
disappear from the left hand list.
