Have you given user permissions to this user to the additional mailbox?
In Exchange Administrator go to the mailbox properties and select the
permission tab.

I have also restored a backup including this users mailbox and using the
exchange system account opened the mailbox - then exported to a pst file. I
keep a recovery server ready to go (off-line of course)for practicing
restores and recovering mailboxes.
