Either install Apple's X11 packages from your install media
(X11User.pkg from System/Installation/Packages and X11SDK.pkg from
Xcode Tools/Packages) or install ghostscript-nox--which hopefully
really doesn't need X11.

You're enough out of date that it's probably easier for you to mark
what packages you have installed, e.g. via
fink list -i installed.txt
and then do a sudo rm -rf /sw. At that point you can use the 0.8.1
binary installer or bootstrap from

As for manually selfupdating: that's a difficult proposition. One
option there is to stick with individual packages and download the
.info and .patch files into /sw/fink/dists/local/finkinfo via your web
browser navigating from http://fink.cvs.sourceforge.net/fink/dists/10.4/ .
