I use the fink tetex and ghostscript along with TeXShop--it just involves changing the default file location in the TeXShop preferences.
Refresh my memory: texlive isn't the same as the Wierda TeX distribution, is it? I've only used Wierda's when I did the non-fink TeX and ghostscript. In any case, I didn't have the same problems that you seem to be. My guess is that there's something strange with the paths--look at the Engine tab on the Preferences. -- Alexander K.
