You can use pine + fetchmail.

Exim is an MTA.
My setup looks like this:
MUA (The mail client): Mutt
MTA

I don't know about exim, but for an easy-to-get-working MTA (not MUA) you
might try postfix. IIRC no configuration is necessary to get it
Exim is an MTA not a MUA
