IA64 is Itanium CPUs I think - you should go with amd64.
But Xeon is Itanium's substitute...

Nope. Itanium and Xeon are developed in parallel. Where Xeon is based off of
desktop CPU architecture (x86, AMD64, et al) the Itanium (aka Itanic due to
slow uptake) is a 64bit CPU completely from scratch.
