Kerala has a distinctive cuisine, very unusual and different from the rest of India. Cooking in Kerala is all about discoveries, aromas and colors. The cuisine is very hot and spicy and offers several gastronomic opportunities to those willing to experiment with this type of cuisine. Here is a very spicy yet tasty dish from Kerala: Meen Moilee (Fish Moilee) 250 grams of white fish (or about 8 ounces) -cleaned Tamarind -- soak a small ball in hot water 1 large onion-sliced 1 large tomato -- sliced Small bunch of curry leaves 3 teaspoons of red chili powder 1/2 teaspoon of coriander powder 1/4 teaspoon of turmeric powder 1/4 teaspoon of fenugreek powder 2 tablespoons of coconut oil 1/2 inch ginger 4 cloves of garlic Salt to taste Pinch of mustard seeds Clean the fish, drain and keep aside. Mix the red chili, coriander, turmeric & fenugreek powders with a little water to make a smooth paste. Heat oil in a pan, toss in the mustard seeds, when they start sputtering, add fenugreek seeds, sliced onions, ginger, garlic, tomatoes, curry leaves, and the paste, one at a time and fry till oil separates. Add a tsp of vinegar if desired. ( optional) Add tamarind extract and check the level of sourness. When the water starts boiling, add the fish pieces, and salt. Add enough water to cover the pieces. Cook on a low fire. When the pieces are almost cooked, increase the heat and cook till the gravy thickens, and the oil is visible. Serve hot with rice.
