Karl Pinto De Souza, driving home on Sunday afternoon, noticed the dumping of tiles, mud and stones and rubble in progress. Other members of the Moira Civic and Consumer Forum and comunidade also gathered at the site and stopped the dumping. It is learnt the range officer tried to work out a compromise by offering to clean up a whole stretch of garbage at Moira, if the complaint was withdrawn. But the residents of Moira were determined to punish the guilty, as they felt this would set an example to others to protect the environment and save the landscape. The landscape, the people and the crops grown in various regions largely influence Maharashtrian cuisine. It is not only memorable for its subtle variety and strong flavors, but also because of the legendary hospitality of Maharashtrian. In affluent homes, feasts often start at mid-day and end when the sun turns towards the western horizon. Here is a Maharashtrian recipe for Eggplant-potato curry also known as vangi-batata bhaaji) 1 big eggplant (aubergine) 2 potatoes 4 green chilies 1-teaspoon turmeric powder Pinch of asafetida 1 1/2 teaspoon mustard seeds or cumin seeds 1/2 tsp of tamarind pulp 1/2 tsp of black Maharashtrian masala (optional) 2 tsp coriander powder Salt to taste Sugar/jaggery to taste 1 tblsp oil Cilantro/coriander leaves to garnish Chop eggplant into 1-inch pieces. Soak in salt water to keep them from turning dark. Make 1-inch pieces of potatoes. Chop chilies and cilantro. Heat oil in a pan. Add mustard seeds or cumin seeds. As the seeds crackle, add asafetida and turmeric powder. Add chopped chilies and fry. Add potatoes and stir. Cover and cook them until partially cooked. Drain water from the soaked eggplant pieces. Add them and fry for 5 minutes. Add 1/2-cup water, tamarind pulp, black masala, coriander-cumin powder, salt, sugar or jaggery and cover until the pieces turn soft and the curry thickens. Garnish with coriander leaves. Serve hot. Variation: Add green peas. Also, crushed ginger and garlic enhances the flavor.
