Residents from Reis Magos, Anjuna and Baga have claimed seeing the substance along their beaches since Saturday evening. This problem is for sure not a natural phenomenon. The tar-balls are on all beaches in Goa and this already at least since 1996! I come twice a year to Anjuna, once in March/April and later in November. And more than 16 years now. And year by year it is the same problem; it is very unhealthy to take a swim when the tar is coming, especially to children and babies. The tourists don't want to walk along the beaches because of the dirt. Last year in March we had a nice tour by car from Anjuna to Palolem with many stops to show my friends the beaches of Goa. The tar was everywhere along the beaches down to Palolem. And nobody is responsible!? And nobody was cleaning the beaches! Why are many beaches black? You just have to look! You can watch the tar spoiling the beaches and nobody is responsible! Since more than 16 years locals from Anjuna or around are coming early in the morning to take away the sand from the beach in North Anjuna. 1989 they came using buffalos to take the sand, later with small cars, now with big cars. They disappear around 07.30 a.m. This happens since so many years and nobody is responsible? And nobody can see how badly the beach has changed? The name is simple too and means Chicken in Wine. The recipe is perfect to serve on those romantic evenings. Coq au Vin:- One chicken cut into eight pieces, 3 oz. oil, 1 cup of frozen pearl onions, 1 cup of mushrooms, washed/ with stems removed, 8 oz red wine, 8 oz chicken broth, 2 tablespoons fresh and softened butter, 2 tablespoons flour, 1 teaspoon thyme, 1 bay leaf, 1 tablespoon minced garlic, 2 slices of bacon, chopped parsley, salt and pepper to taste. Dice the bacon. In a large skillet heat the oil and add the chicken. Brown well on all sides. Remove from skillet. Add bacon and brown slightly. Then add the mushrooms and onions and lightly saute. Remove from pan with a slotted spoon and set aside. Add the butter to the same skillet and melt. Stir in the flour to make a roux. Add chicken broth, thyme and bay leaf. Bring to a gentle simmer. Add the wine and salt and pepper. Return the chicken to the pan and cook very slowly for about 20 minutes until chicken is completely done (thermometer inserted into the meat registers 170 degrees F. Add the bacon, mushrooms and onions back to the skillet and warm. Remove and divide between two plates. Pour the sauce over the chicken. Heat the pan to very hot, add remaining fourth cup of wine and stir well. Pour this mixture over the chicken. Garnish with parley and serve with very coarse, crusty bread and wine.
