CULINARY CORNER: Healthy n fresh -- Broccoli, nature's antioxidant
---------------------------------------------------------------------

Here is a salad that uses nature's best antioxidant in form of a very
delicious vegetable called "broccoli". It can be used as a side dish.

Shirley's Broccoli salad: 1 medium onion, finely diced, 1 bunch
broccoli, 1 cup grated cheddar cheese (optional), 1/2 pound bacon, 1/2
cup of toasted pine nuts, 1/4 cup golden raisins.

DRESSING: 1/4 cup sugar, 1/2 cup mayonnaise, 1 Tbsp. vinegar

Cut bacon into small pieces and fry until crisp; drain well on paper
towels. Break broccoli into small pieces. Mix dressing ingredients and
pour over broccoli, onion, cheese and bacon; mix well. TIP: skip the
sugar if you do not like it sweet.
