Month's mind. --------------------------------------------------------------------- TODAY'S SPECIAL RECIPE: Grandma's pork dish (Mangalorean style) Courtesy: Savour the Flavour of India, 2005 recipes by Edna Fernandes --------------------------------------------------------------------- INGREDIENTS: 1/2 kg pork, 4 green chillies slit lengthwise, 2 pods garlic chopped, 1 inch ginger chopped, 1/2 kg onions chopped fine, 2 bay leaves, 2 teaspoons vinegar, 2 tablespoons tamarind soaked in hot water and with juice strained, 1/2 coconut juice, 1 cup water. TO ROAST AND POWDER: 20 red chillies, 1/2 teaspoon cumin seeds, 1 tablespoon coriander seeds, 1 pinch mustard seeds, 1/2 teaspoon tumeric powder, 1/2 teaspoon tumeric powder, 1 inch cinnamon sticks, 10 peppercorns, 2 cloves. METHOD: Roast all the ingredients separately from red chillies to cloves and dry grind them together. Cut pork into small thin pieces, wash and squeeze out all the water thoroughly. In a pot, mix the port with the powdered masala, chopped onions, green chillies, garlic and ginger. Add tamarind juice, vinegar, bay leaves, a cup of water and salt to taste. Cook on slow fire until the pork is well cooked and dry. SUGGESTION: You can substitute beef instead of pork.
