Hello --
Brand new user of GPGTools here. I seem to be signing messages correctly, but
the encrypt button in the toolbar is greyed out, even when attempting to send
to someone who's key I've imported.
I don't see the Trust all Keys option in my PGP tab under Mail's Preferences.
I'm using

at the moment it's necessary that the address associated with the key is
exactly the same
as the one you're sending to.
Could you verify if that's the case.
Trust all keys is automatically enforced, so that shouldn't be an issue.

Is Jitsi an alternative solution to this?
Not sure how much of it is encrypted and safe. But it looks like an interesting
project and the follow up to z-fone, I think.
