I'd suggest Anna Levine's Sydney Taylor Notable Book, Jodie's Hanukkah
Dig, an archaeology story about a little girl on a dig with her dad in
Modi'in. It has a Hanukkah motif but can be read any time of year.

I like Michelle Edwards's book Chicken Man. The text would be too
difficult for first- and second- graders, but this age group enjoys a
read-aloud of the book. Even young children can appreciate the
values exemplified by the main character. The discussion can be
tailored to that age
