It's in the Home tab in the ribbon menus. Tab down until you find the Fonts
area and you should see Font Size, Font Color, and just Font, which is where
you can select from the different fonts.

Windows 8.1 comes with the metro app called simply Mail. Like most Metro
apps, it leaves a lot to be desired. I have not fooled around with it too
much, but I can see from when I have, that you can tab or shift tab back and
forth through a new message, and add your receipients,
