Simply remove/move $JBOSS_HOME/server/default/deploy/jetty-plugin.sar so that Jetty will not start up. That will leave port 8080 available for Tomcat. Oh, and don't just put the file in a subdirectory of /deploy, JBoss looks inside subdirectories now at startup (it doesn't catch changes/redeploys in subdirectories though).
