On macOS this can be done easily with the following command:
defaults write org.libreoffice.script NSRequiresAquaSystemAppearance -bool yes
(disable dark mode)
It works pretty well

I've been having trouble with this behavior of LO picking from W10 theme for
the past 2 or 3 releases.
So, yes... Please be considerate and mindful towards the user by offering an
option to select theme.
