Also installed WinXP to try it out there and it's working fine, so it's
no hardware-problem.
Is this a bug (probably only on amd64 kernels) or am I just too stupid
and did forget something?

also
tried compiling the kernel without any dvb-modules and adding the ones
from v4l-dvb to keep it really clean and as expected - not working ;)
Do you have any other idea what's going wrong here?

You could try to disable
[ ] Load and attach frontend modules as needed
and recompile the driver. Then you must load all frontend drivers
