For extracting dvd content and putting it onto the hd, I use a program called mac the ripper. It can do entire disks, or just the tracks you want. It leaves them in vob format so you can use dvd playing programs to view them from the hd, just as if they were still on the dvd disk, only

I could, of course, be wrong but it's my understanding that there's far more to this than simply enabling the audio services. You'd have to figure out the VoiceOver side of it as well. Apple says it cannot be done, this has actually been discussed with their engineers by quite a few people.
