Is there anyway of configuring WHAT headerfields that are asked for before
entering edit-mode?
Default seems to be 'To:' and 'Subject:'.
I'd like to set 'Keywords:' as well.

You can configure mutt to also ask for Cc: and Bcc: by setting askcc
