In NY you have to honor a GC...no expiration dates allowed. Well... you can
PUT them on the Gc ( to encourage speedy use) but you have to honor them past
the expiration date...OR you can refuse to honor it but have to send the money
that the client spent to unclaimed funds in the governmental

That is what I have been doing the past few years. Put the cash in an
envelope with who spent what and check it off after they use it.
But... I want to go with the gift cards. I want THEM to be responsible

in essense, the amount of money that passed hands. So if the GC was for a
buy one pedi (say valued at $50) get one half off, value of the GC would be
