You want to read chapter 10.6 of the ConTeXt manual; your question is
answered on the second page of that chapter.

Standard '--' gives slightly different, light dash. From the Acrobat, I
know that the font is txsy.
In the page you specified, there is a trick how to produce diamond
(\diamond). But there is no \dash symbol defined.
