Thanks Ann and others for comments. Yes, you can eat velvet shank mushrooms. A cultivated (white) variety is enoki-take well known in Asian food and claimed to have health benefits. But you have to be careful not picking a similar looking mushroom, the deadly galerina (funeral bell)! Henk Op di
