I've done some pseudo-investigation (actually, just opened a 1:1 RAW in Silkypix and Pentax DCU). They're saving the entire 3:2 frame, but with a tag for 1:1 cropping; so you can recover the "extra" data - assuming your preferred image processing software's crop tool supports this operation.

I tested crop mode as follows: K-1 with Sigma APS-C lens 8-16mm @ 16 mm (@ 16mm the Sigma covers FF) 3 pictures of bookshelves filled with books: FF gives 44.5 MB APS-C mode gives 22.2 MB 1:1 mode gives 45 MB So Mark Roberts suggestion is right: the camera adds just a cropping specification
