Apple iCloud -- Arrgh

For some reason, my two Macs (one for work, the other for photos) have decided that everything that I want to save should be saved to iCloud. I don’t want anything on iCloud. I have loads of space on both computers and on external hard drives. I can’t find anything in the Control Panel to turn
