I need to migrate my old postfix server to a new machine.
Domain will be the same. I would like to make this migration seamless
for the end users and give them 1-2 months for migration (both servers
should work at that time correctly).
My current deployment is the following:

I have many users i can not allow for any downtime (not even few seconds).
Also i can not loose any single email.
Your solution will not guarantee that.
I am looking for true HA solution.
That is why both servers needs to work at the same time for 1-2 months

e-mail is not a real-time messenger

day, 90% of which were spam. With numbers like that, trying to go through
and blacklist individual IP addresses or users is a waste of time.
Looking through the logs, I have noticed an attempt to send out mail
which temporary local fails. I did a dig mx and noticed there is no
mx record. I then tried to connect to the email address domain
portion of the name. Sure enough, I was able to connect.

Sounds like you're trying to send email to a host that is possibly
greylisting.
