Amish Zucchini Fritters 4 cups shredded zucchini 4 egg yolks 1 cup flour pinch of salt to taste 1 cup shredded cheese Combine zucchini and yolks together mix in flour and salt as well as cheese. Beat egg whites still stiff and fold in to mixture. If your yolks don't stiffen add extra flour (about 1/2 cup) to get desired consistancy. Fry in lard, bacon fat or butter. Do Not deep fry, pan fry only.
