Cucumber Dip or Spread
2 medium cucumbers
2 (8 oz) pkgs cream cheese, softened
Several drops hot sauce
1 (1 oz) pkg dry ranch dressing mix
1/2 tsp garlic powder
Peel the cucumbers, cut in half lengthwise and scoop out the seeds. Chop
cucumbers in very fine pieces, or in food processor.
In a mixing bowl, combine the cream cheese, hot sauce, dressing mix and
garlic powder and beat until creamy.
Combine the cucumbers and cream cheese mixture and mix well. Serve with
chips.
*May also add 1/2 cup chopped pecans.
**This dip makes great "party" sandwiches made with thin, sliced white
bread. If you do use it for sandwiches, make sure you squeeze all the
water out of the cucumbers
