Lemon Lime Angel Food Cake 1 pkg. angel food cake mix (16 oz) 1 cup water 1/3 cup fresh lemon juice 2 t. grated lime rind Lime slices, optional Frozen fat free whipped topping, thawed, optional Preheat oven to 350. Prepare cake mix according to pkg. directions, using 1 cup water and 1/3 cup fresh lemon juice. Stir in lime rind. Stir in lime rind. Spoon batter into an ungreased 10 inch tube pan, spreading evenly. Break air pockets by cutting through batter with knife. Bake at 350 on lowest oven rack for 40 minutes or until cake springs back when lightly touched. Invert pan on a heatproof glass bottle; Cool cake upside down in pan. Loosen cake from sides of pan using a narrow metal spatula or knife, and remove form pan. Invert cake onto a plate. If desired, garnish servings with lime slices and whipped topping.
