KACI'S STRAWBERRY SHORTCAKE
2 lbs. strawberries
2 cups sugar
2 cups water
1 can spray Redi-Whip
1 box lemon shortbread cookies
24 white cake dessert shells
3 lemons
1 gallon vanilla ice cream
Rinse strawberries and cut off stems. Mix water and sugar in a pan and heat on 
stovetop
until sugar is dissolved into a simple syrup. Once the syrup is done, put 
strawberries
into a large flat mixing pan, cover with syrup and mash down with a potato 
masher.
Next, add the zest of all 3 lemons then slice lemons in half and squeeze all the
juice into the strawberry mix. Chill for at least one hour.
Once ready to serve, microwave the white cake dessert shells for 20 seconds, top
with strawberry mixture, one scoop of vanilla ice cream, Redi-Whip and one lemon
shortbread cookie.
