Salsa Meatballs
Makes 16 appetizer servings (3 meatballs and 1 tbsp. sauce each)
1 lb. freshly ground raw turkey
1/2 cup salsa, divided
1/4 cup fine, dry breadcrumbs
1/4 cup (1 oz.) shredded reduced-fat Monterey Jack cheese
2 tbsp. finely chopped green onions
2 cloves garlic, minced
Cooking spray
3/4 cup fat-free sour cream
Combine turkey, 1/4 cup salsa, breadcrumbs and next 3 ingredients in 
a large
bowl; stir well. Shape turkey mixture into 48 (3/4") balls. Place 
meatballs
on rack of broiler pan coated with cooking spray. Bake at 400* for 20-
25
min. or until done. Drain on paper towels.
Combine sour cream and remaining 1/4 cup salsa, stirring well. Serve
meatballs warm with sour cream sauce mixture.
