Hello I am using james 2.3.2, so excuse me if this may have changed to james 3.0. For logging you could enter a "LogMessage" mailet. true true "Received mail"   before and after your mailet. Your smtp log shows one mail with two recipients

For these directions: We ship with default configuration (embedded in jars) and -template files you can use to override the default configuration. Simply copy in conf folder *-template.xml to *.xml (example: smtpserver-template.xml to smtpserver.xml), and change in *.xml the settings to map
