Is there something I am missing here? A projector would just be like any other
monitor being plugged in.
We have various projectors, big TVs and such like plugged in to SunRay 3 boxes
here and it just works.

The output display on a 3i matches the the panel itself, both of which
are fixed @ 1920x1080. Your projector must be able to handle the
resolution. There is no way configure a different resolution on the 3i.
