It seems to pull the group memberships from the chat service each time empathy is opened. For example, if you have a group setup in your facebook contacts, then each time you open empathy, the members of that group will be listed in that group, even if you changed it last time you were in empathy.

It seems that they have removed the themes from the appearance tool, and instead this is possible through gnome-tweak-tool. Be careful when adding themes though, as they may not work correctly with Unity. Here are the discussions I found on this topic, which you can add to if you'd like:
