For -intel especially, displayconfig-gtk doesn't work very well. The new Screen Resolution applet should be much better (although see https://wiki.ubuntu.com/X/Config for remaining manual configuration steps required.) Also, displayconfig-gtk is being deprecated - see

I have the same problem with 2 Monitors and NVIDIA 7300GS Cards. The connected monitors are Yuraku MJ9CNK TFTs with 1280x1024 resolution. They are not in the database so i have to choose Generic TFT with 1280x1024. But i cannot select the Monitors. It falls back to Plug and Play and lets me choose
