20.10 has the same version of the ubuntu-dock, but newer GNOME other
things. If you're confident it's fixed in 20.10 then we should mark this
as fixed. But we can only fix 20.04 if someone finds out which package
fixed it...

i tested this on a fresh install 20.10 also seems like to work by

Weirdly after re-enable the gsettings again it seems not
doing that mount/unmount spam anymore just a few gvfsd warnings (see journal2)
the icon on the dock looks pretty stable now

Weird, so the mount error stopped when disabling the option? Do you get
the issue if you enable the option again?

the gsettings workaround seems to work!
the phone mounts sane in nautilus now
and journal does not mount/unmount spam anymore

As a workaround please try this (to hide the phone from the dock):
gsettings set org.gnome.shell.extensions.dash-to-dock show-mounts false
