Seamonkey
This is a short term solution that can be done to allow you to select
Seamonkey as a default application.
gedit ~/.local/share/applications/mimeapps.list
Add the following lines:
[Added Associations]
x-scheme-handler/mailto=seamonkey.desktop;
x-scheme-handler/http=seamonkey.desktop;
Yes, those should be added to the MimeTypes field of the desktop file.

It's missing not only from the web browser dropdown list but also from
the mail client dropdown list. In the former, I see Firefox, Chromium
and Opera, but no Seamonkey. In the latter, I see Evolution, Thunderbird
and Opera, but no Seamonkey.

Come again? You're telling me that the reason Seamonkey isn't an
available option, even though it's installed through the Ubuntu Software
Center is because the Seamonkey software didn't code something to be
referenced by the Preferred Applications drop down list?
