dovecot is at 1:2.1.7-7 in Debian, with no newer version in Debian experimental. Since Ubuntu generally follows Debian, to get a newer version we need the newer dovecot packaged in Debian first. It may be that Debian lags upstream right now because of the current Debian freeze for wheezy's release. If there are any severe bugs, please file them in Launchpad, identify the fixes and follow steps 1 through 4 of the stable release update procedure at https://wiki.ubuntu.com/StableReleaseUpdates#Procedure If all updates in 2.1.8+ meet SRU policy, then it may be possible to update to this in an SRU.
