Where/when do the tmpfs mounts like /var/log get mounted?
Because I installed the dhcp3-client package the remountro won't work.
It writes to /var/lib/dhcp3 so I was thinking of making that directory
tmpfs.

What version are you using? If you use 0.6.x, just add /var/lib/dhcp3 into
VOYAGE_SYNC_DIRS in /etc/default/voyage-util.
