Thanks to suggestions from this list, I have been able to get it working. I did have to have grub configured in a way different than what systemconfigurator knew how to do.
I was not able, however, to put the grub command into a post-install script, because I was never able to get the grub command to work in the chroot-ed context. Instead, I had to put the appropriate grub command into the master script. I also removed the "configboot" and "runboot" flags to systemconfigurator to avoid all those errors that were ultimately meaningless anyway.
