Maybe look at the kernel vga boot parameter? You might be able to
specify a 800x600 video mode at boot time, though I think it needs to
be specified in hexadecimal. /usr/src/linux/Documentation/svga.txt
should be helpful.

places and config files in VMware and ~/.vmware, but can find nothing
that looks liable.
