your right, modify the schema isn't the way to go.
Migrate full data is the way to go.

As long as mapping the fields one to one between 2 database, the work is 
doable, but as always with ERP version upgrades, many new fields are added, 
some are deleted, logic is changed and accordingly values get a different 
meaning. (e.g. see changes for accounting types to support new P/L reporting)
Therefore logic should be created into the migration script to fill the new 
fields with some reasonable date and recalculate values based on changed logic.

This is a hugh work. So one needs to know how many migrations will 
approximately be done, before investing time in this piece of migration 
software and which modules should be covered.
Plus as every installation is different there will be parts that the migration 
software can not cover. This can be reported and should be done manually 
afterwards.

So yes,  it's not easy and I fully understand OpenERP SA point of view here 
too. (It's not e.g. internetbrowser software that's to upgrade.)
